Sabhyata

Fig & Fold is one person's kitchen. It started the way most good things do, with friends asking her to make it again.

Before the boards there was physics. She holds a master's degree in it from the University of Delhi, which turns out to be less of a detour than it sounds: a board is a problem of proportion, temperature and timing, and she treats it like one. Nothing is assembled the night before, and nothing goes out that she wouldn't put on her own table.

She is also a mother to one, which is why deliveries run to slots and why the order book closes when it's full rather than getting bigger. Fewer boards, made properly, on the day.
